Food waste is a global problem that has environmental, social and economic consequences. This waste can occur at any point in the food preparation process, which involves a cost for any business. Authors of various environmental studies have emphasized that organic waste management is of great importance due to the enormous environmental and economic effects it has. Almost a third of all food produced worldwide is thrown away, which leads to a huge financial loss and a large amount of greenhouse gas emissions as organic matter decomposes in landfills.

Influence of sustainability programs with organic waste control

Some successful waste management programs in the restaurant industry show that in addition to reducing negative environmental impacts, they also increase operational efficiency by cutting disposal costs and improving profit margins.

In addition, customer awareness of sustainable practices is increasing, and restaurants that are reducing their waste can greatly increase their brand image and customer loyalty.

Factors that contribute to waste

Several factors can contribute to this waste, including inadequate meal planning, lack of pre-production training, overproduction, customer preference for certain foods, and improper portioning on the customer’s plate.

Inadequate planning can cause an increase in waste that could be avoided with the use of preparation technical sheets, training to reduce the correction factor, and use of a frequency map of the number of meals served. The frequency map is often used to control costs within what is prepared from the pre-preparation of the food until it reaches the customer’s table. In addition, all waste ends up being returned to the environment and the concern is that if the food production sites are industrial, restaurants are working to be sustainable, controlling what is produced and consequently generating less organic waste.

In conclusion, companies benefit from implementing sustainability, as they can develop an action plan to reduce costs by quantifying waste and understanding how much is wasted, thus increasing their profit margin. Consumers can be influenced through marketing when the company informs them that it operates sustainably, in addition to benefiting the environment by controlling the waste that is generated and returned to the environment.
